What are your thoughts on pros/cons of these:
Staying in a team/org, gain lots of context and grow career there
Or chase what’s exciting across orgs/companies and have a slow growth in terms of seniority

I think this is a false dichotomy. Those choices aren't mutually exclusive opposites. In #2, for instance, some people switch companies and actually grow more quickly.
